This comes from the Gara Agena Washing Station in Sidama, Ethiopia and is one of the the region’s “Special Prep” lots, produced in very limited quantities. 

Cherries are carefully handpicked from a limited number of smallholder farms. 90% of the cherries are perfectly picked, the right red colour. 5% semi red and 5% overripe. They are then soaked, depulped, and fermented for 36 hours before being dried on raised beds for 21 days.

Located near the Geta River in the fertile highlands of Sidama, the station’s precise processing enhances the clarity for the coffee, sweetness, and refined flavour.

This premium Grade 1 lot showcases the best of Sidama’s terroir and offers an elegant and clean profile. Tasting notes of sweet lychee, vanilla, and toffee are beautifully balanced with a jammy peach finish and velvety mouthfeel.

Fieldwork Coffee

Fieldwork Coffee is a modern Australian micro-roastery founded in 2022 by Tim Williams, whose career spans leadership roles at Intelligentsia Coffee, Square Mile Coffee and Workshop Coffee, alongside his work running the World AeroPress Championship.

In 2026, the baton was passed, with Fieldwork Coffee taken over by longtime friend and industry colleague, Scott McAuliffe.

Today, we roast all of our coffees in Arthurs Creek, Victoria on a state-of-the-art Loring S15 Falcon. Using cutting-edge technology such as Roast Architect, we roast with extreme accuracy and precision, ensuring solubility while retaining all the wonderful flavours locked within each coffee.
