Gamma Ray is Fieldwork's take on a darker roast espresso, fuller, richer, and more developed than usual, but still grounded in our approach to balance, sweetness, and structure.

It’s built for those who prefer a more traditional espresso style, or who find themselves reaching for coffees with deeper, heavier tones.

Where Fieldwork's House Espresso is all about balance and harmony, Gamma Ray leans deeper, offering a fuller expression of the coffees they are with. It shines in milk (even almond, oat, and soy) where its richness carries through, and is equally suited to home and espresso machines, or the stovetop espresso pot.

Built and developed to emphasise body, richness, and depth, expect a syrupy cup with lower acidity and plenty of dark chocolate, toasted pecan, and brown sugar.

Fieldwork Coffee

Fieldwork Coffee is a modern Australian micro-roastery founded in 2022 by Tim Williams, whose career spans leadership roles at Intelligentsia Coffee, Square Mile Coffee and Workshop Coffee, alongside his work running the World AeroPress Championship.

In 2026, the baton was passed, with Fieldwork Coffee taken over by longtime friend and industry colleague, Scott McAuliffe.

Today, we roast all of our coffees in Arthurs Creek, Victoria on a state-of-the-art Loring S15 Falcon. Using cutting-edge technology such as Roast Architect, we roast with extreme accuracy and precision, ensuring solubility while retaining all the wonderful flavours locked within each coffee.
