Fresh Cuts is Fieldwork's seasonal filter blend, built to be consistent, approachable, and quietly expressive.  It’s designed with everyday enjoyment in mind: a sweet, rounded cup with enough clarity to hold your attention, and enough familiarity to relax into.

Each new version draws on standout coffees from recent collections, anchored by the structure of Estrella del Ostro, a washed Colombian lot that has great versatility and depth. To this Fieldwork add one or two complementary components, chosen for character, cup profile, and compatibility.

Like an EP compilation from that label you adore, Fresh Cuts is a snapshot of what we’ve been enjoying lately; familiar voices in a well-made blend, intended to be played on high repeat.

Whatever the season, Fresh Cuts is roasted medium-light, bringing together notes of stone fruit, fresh berries, and leatherwood honey.

Fieldwork Coffee

Fieldwork Coffee is a modern Australian micro-roastery founded in 2022 by Tim Williams, whose career spans leadership roles at Intelligentsia Coffee, Square Mile Coffee and Workshop Coffee, alongside his work running the World AeroPress Championship.

In 2026, the baton was passed, with Fieldwork Coffee taken over by longtime friend and industry colleague, Scott McAuliffe.

Today, we roast all of our coffees in Arthurs Creek, Victoria on a state-of-the-art Loring S15 Falcon. Using cutting-edge technology such as Roast Architect, we roast with extreme accuracy and precision, ensuring solubility while retaining all the wonderful flavours locked within each coffee.
