Lester Francisco Marquez began growing coffee over ten years ago on his farm, El Gravileo,  named after the Silk Oaks that are an important part of the lands’ identity.

Lester started with just two coffee trees, but he expanded to the multitude of crops he has planted today. Originally, Lester planned to cultivate the parainema variety, however, due to the farms high elevation, the variety didn’t thrive. He planted the typica variety instead which has thrived due to the cool and stable climate, that is ideal for slow cherry maturation.

Cherries are harvested across El Gravileo and walked 40 minutes to Lester’s home, where he lives with his wife Dima and their son, where it is processed.

As a roaster, Monastery Coffee feel it is their role to firstly, roast only to preserve and highlight the individual qualities inherent in each coffee due to the meticulous work of the producers, and secondly, to make sure the consumer knows who the producers are and where the coffee came from.
