This lot comes from Sookoo Coffee, founded by Ture Waji and his brother Assefa, in Ethiopia’s celebrated Guji Zone. Working closely with smallholder farmers across the surrounding kebeles, Sookoo Coffee produces both natural and washed coffees, with each lot named after the community it originates from, a reflection of place and provenance in every cup.

The cherries are primarily the varieties Gibirinna 74110 and Serto 74112, selections released by the Jimma Agricultural Research Center in 1974. Originally chosen for their resistance to Coffee Berry Disease, these cultivars are now among Ethiopia’s most widely planted and are prized for their clarity and vibrant acidity.

This coffee was processed at the Weessi washing station where fully ripe cherries are gently pulped using a Penagos eco-pulper, then fermented and soaked in water for around 12 hours before being dried on raised beds.

The cup feels vibrant and refreshing with ripe nectarine, honeydew and vanilla and a bright lime sorbet finish.

Fieldwork Coffee is a modern Australian micro-roastery founded in 2022 by Tim Williams, whose career spans leadership roles at Intelligentsia Coffee, Square Mile Coffee and Workshop Coffee, alongside his work running the World AeroPress Championship.

In 2026, the baton was passed, with Fieldwork Coffee taken over by longtime friend and industry colleague, Scott McAuliffe.

Today, we roast all of our coffees in Arthurs Creek, Victoria on a state-of-the-art Loring S15 Falcon. Using cutting-edge technology such as Roast Architect, we roast with extreme accuracy and precision, ensuring solubility while retaining all the wonderful flavours locked within each coffee.
