Shakiso, Washed - Ethiopia

This coffee comes from smallholder farmers in the Shakiso area of the Guji zone in southern Ethiopia. The region is known for its lush forests, rich red soils, and high elevations, all of which contribute to producing coffees with exceptional complexity and aromatic intensity.

Most farmers in this area cultivate coffee on small garden plots surrounding their homes, carefully hand-picking ripe cherries during harvest. The coffee varieties grown here are traditional Ethiopian heirloom cultivars, celebrated for their diverse and expressive flavour profiles.

After harvest, cherries are delivered to a local washing station where they are carefully sorted and floated to remove any underripe or defective fruit. The cherries are then pulped and fermented in water for 24–36 hours to break down the remaining mucilage before being fully washed with clean water. The coffee is then dried slowly on raised African drying beds under the sun until it reaches the ideal moisture level.

The combination of high altitude, heirloom varieties, and careful washed processing creates a cup that is clean, lively, and aromatic. Filter brewing highlights the blueberry sweetness and jasmine florals, while espresso presents a softer profile with rounded fruit sweetness and a silky, balanced finish.
