High in Acevedo, Huila, Finca Las Mercedes is the farm of Heladio Ossa, who has spent decades developing one of the region’s most environmentally considered coffee farms.

Heladio’s dedication to quality was recognised with second place in the 2011 Pitalito Cup of Excellence, although recognition has never been the goal. His focus remains on producing exceptional coffee while caring for the land that sustains it.

That commitment is evident throughout the farm. Coffee pulp is composted and returned to the soil as fertiliser, plastics are carefully separated for recycling, and corridors of native trees protect the farm’s three natural springs. These restored habitats have also encouraged the return of native birdlife, adding to the biodiversity of the farm.

The same care and attention are reflected in the cup. Jammy raspberry and a rich, syrupy sweetness lead into a smooth chocolate finish, creating a beautifully balanced and satisfying coffee.
