Planadas sits in Tolima, ringed by the mountains of Colombia's central cordillera, its creeks and rivers all draining down into the Atá River. The municipality dates back to 1932, when the Spanish Jesuit priest Fermin Larrazabal led a group of settlers from Huila and Antioquia to a plateau above the river. San Fermin takes its name from him, loosely tied to the San Fermin festival back in Pamplona, Spain.

Coffee here is grown by small, family-run farms. The San Fermin lot itself started in 2013 initially with thirty producers pooling their coffee together, every year the number of community members grows.

Ripe cherries are hand-picked, then floated to identify underripe or damaged cherries. Most farms here ferment the coffee dry now, without added water, for 30 to 36 hours in traditional, covered tiled tubs. After a light double wash, it dries slowly, anywhere from 15 to 30 days depending on the farm's climate, spread across parabolic patios, raised beds, or rooftop patios built with retractable roofs.

This lot of washed Caturra, Colombia, and Castillo, was grown in the shade of guamo, cedar, and cambulos trees. Expect a smooth and silky, satisfying mouthfeel, with notes of fig, caramel, and chocolate carried all the way through the cup.

Therefore Coffee

We want to live in a world where coffee producers, their families and communities can thrive.

Unfortunately, the history of coffee production is intertwined with that of colonialism and slavery. Even today it is not uncommon for producers and workers to be faced with poverty, food scarcity, and child labour. Modern slavery still exists within the coffee producing industry.

Coffee is traditionally sold at a price that has nothing to do with farmer's living expenses (Read: C Price) and is often below the cost of production. We don't like the idea of Wall Street influencing how much our producers get paid on a given day. Our sourcing partners always pay premium prices based on cost of production and quality; not the market price.
