Starting his coffee-growing journey in 2021, Jeremias Requejo carefully studied the local climate, altitude and soil before planting Caturra and Bourbon, varieties selected in consultation with neighbouring farmers for their suitability to the growing conditions and potential in the cup.

Only the ripest red cherries are harvested before undergoing 72 hours of anaerobic fermentation in plastic bags, with close monitoring throughout. The coffee is then washed and dried on the pampa before moving to a solar dryer, where it is regularly turned to ensure even drying and precise moisture control.

This considered approach, from variety selection to post-harvest processing, reflects the producer’s commitment to developing quality and consistency from the outset.
