Xinoo Yirgacheffe, Natural - Ethiopia

This lot hails from the vibrant, bustling community of coffee-farming families in the Gedeb district, who work tirelessly to produce some of the most exquisite coffees with delightful floral and fruity notes thanks to the rich volcanic soils, high altitude, and diverse coffee varietals.

Handpicked ripe cherries are delivered to the Gotiti washing station for processing. This naturally processed coffee requires the coffee cherries to dry whole in thin layers spread out on African raised beds in the sunshine. The coffee is then de-pulped, leaving the results of the drying process (natural) to embed natural sugars and fruit-forward notes in the roasted coffee. 

This lot embodies the extraordinary flavour and character of Ethiopian coffee. Presenting tasting notes of sweet citrus flavour throughout, paired with vanilla-candy like flavours, florals, and undertones of dark berries. Overall, it has plenty of flavour, sweetness, with changeable fruitiness depending on the brew method.
