Description
This coffee comes from a small, 1-hectare farm near Tarqui in Huila, Colombia.
This particular selection is picked from pink bourbon trees, a relatively new variety from Huila, Colombia, was once thought to be a hybrid of red and yellow bourbon, but genetic testing links it to an Ethiopian landrace.
After picking, the cherries rest for 12 hours before being depulped and fermented in sealed containers for 60 hours. Once fermentation is complete, the coffee is washed and dried on parabolic dryers and African raised beds, a process that takes around 25 days.
In the cup, you can expect a lightly-syrupy texture, with the coffee tasting of sweet key lime pie, Pepsi cola, and dried hibiscus flowers.
