Maria Olympia, Washed - Honduras

For more than a decade, Mecca Coffee has returned to Maria Olimpia's coffee. Drawn to its consistency, its clarity and quiet confidence, Maria, now well over 90, continues to tend to her farm, Finca Los Pinos, in El Cedral, Santa Barbara. This is a special and unique place, one of the most expressive coffee-growing regions in Honduras.

Perched high on Santa Barbara mountain, El Cedral's cool mists, limestone rich soils and slow cherry maturation shape coffee that is both vibrant and composed. On Maria's farm, old Bourbon, Typica and Pacas trees grow within a carefully restored ecosystem, one she has nurtured without synthetic inputs, allowing the land to regenerate naturally over time.

This balance of environment and intent reveals itself in the cup - tropical and lifted, with notes of apricot and sugarcane underpinned by a clean and structured finish.
