Description

While the Schiavo family has coffee producing experience going back four generations, they initially struggled with both quality and yield at their former location. Then, upon relocating to their current farm in Forno Grande, they faced scepticism from the local farming community due to the area's cold and humid conditions. Defying expectations, the family quickly demonstrated their capability to produce both high-quality and high-volume coffee.

For the past 16 years, the Schiavo family has been dedicated to specialty coffee production, and with the guidance and mentorship of Eduardo Tozi, a Cup of Excellence-winning producer, they acquired the necessary equipment to enhance their coffee processing methods.

José’s daughter, Jaqueline Schiavo, is now actively involved in the farm’s operations, ensuring the continual improvement of crop management, harvest, and post-harvest processes. Jaqueline’s commitment promises a bright future for the farm, with a steadfast focus on producing top-quality specialty Arabica coffees.

The 20-hectare farm is carefully managed, with approximately 60% of the land dedicated to coffee cultivation and 20% preserved as a forest reserve, reflecting the Schiavo family’s dedication to environmental sustainability.

This coffee offers a soft, rounded, and warming cup profile, tasting of toasted hazelnuts, nougat, and cacao nibs, with a long finish reminiscent of leatherwood honey.
