From Shakisso in Ethiopia’s Guji region, this natural lot comes from Jigesa, Testi Specialty Coffee’s first processing site, established in 2015. The washing station receives ripe cherries from around 750 smallholder farmers across Dambi Uddo and neighbouring communities.

At 1,850 masl, with contributing farms reaching around 2,050 metres, the cool growing conditions encourage slow cherry maturation, helping develop sweetness, density and complexity.

Ripe cherries are carefully selected and dried whole for 15–18 days, with regular turning, controlled airflow and protection from the strongest midday sun. This measured approach helps ensure an even, clean drying process while preserving the coffee’s natural fruit character.

In the cup, the natural process brings bright mandarin and ripe peach, supported by layered sweetness and a silky, structured mouthfeel. Expressive and fruit-forward, yet remarkably clean, this is a vibrant expression of Guji with clarity and balance.
