Jhoan & Diego Vergara, Natural - Colombia

Finca Las Flores was established in 1990 by Edilberto Vergara and Nubia Ayure, after moving from Cundinamarca to Huila in search of a new beginning. What started as a small two-hectare farm has since grown into one of Colombia’s most exciting coffee projects, now led by the next generation of the Vergara family.

Today, brothers Diego and Jhoan Vergara continue their family’s work with a focus on rare varieties, careful processing and expressive, high-quality lots. Diego plays a key role across fermentation, drying and quality control, while Jhoan continues to explore new processing methods that bring out the potential of each variety.

This lot is Chiroso, a lesser-known Arabica variety that has become increasingly sought-after in Colombia for its sweetness, complexity and distinctive elongated bean shape. Genetic testing suggests Chiroso may be linked to Ethiopian Landrace varieties, adding to its intrigue and cup potential.
