Ayla is a privately-owned washing station in Ethiopia’s Sidama zone. The washing station is one of 28 owned by Testi Coffee, a family-owned company founded by Mr. Faysel A. Yonis. Ayla produces exceptional washed and natural processed lots using the nearby Bonora river as its main source of fresh water. At Ayla, Testi separates and processes each kebele’s cherry delivery as a distinct lot, providing extra traceability.

Each day, carefully hand-picked coffee cherries are delivered to the washing station and meticulously sorted.

The cherries are then graded by weight and laid to dry on raised beds. Coffee cherries are placed in very thin layers on raised beds to slow the drying. At midday, the coffee is covered to protect it from full sun. It is also covered overnight to prevent damage from morning dew. The full drying process takes around 15-18 days to reach optimum levels.
