El Diviso Sidra, Washed - Colombia

Sidra is one of specialty coffee's most coveted cultivars. Grown by only a small number of producers, it is celebrated for combining remarkable elegance with vivid tropical fruit expression. When exceptional genetics meet meticulous farming and careful processing, the result is a coffee of extraordinary clarity and complexity, qualities beautifully captured in this lot from El Diviso.

This coffee was produced by brothers Nestor and Adrian Lasso at El Diviso, their family farm in the mountains of Bruselas, Huila. Widely recognised as part of Colombia's new generation of pioneering producers, the Lasso brothers have earned an international reputation for combining meticulous cultivation with innovative post-harvest techniques.

For this washed Sidra, however, restraint is the guiding philosophy. Rather than allowing processing to dominate the cup, every stage is designed to preserve the cultivar's natural elegance and reveal the character of the farm itself.

Only perfectly ripe cherries are selectively harvested before undergoing a short, carefully controlled fermentation. After pulping, the coffee enters a second, slower fermentation that gently removes the remaining mucilage while enhancing sweetness and complexity without compromising clarity.

The parchment is then thoroughly washed, graded by density and dried slowly under carefully controlled conditions. This measured approach preserves delicate aromatics while ensuring exceptional stability and consistency in the final cup.

The result is a beautifully expressive washed coffee that balances intensity with finesse. Tropical notes of passionfruit and mango lead the cup, supported by the soft sweetness of melon and the floral delicacy of lychee. The silky texture, vibrant acidity and lingering finish create a coffee of remarkable purity, one that speaks as much of the Sidra cultivar as it does of the precision and patience behind its production.
