La Divisa, Washed - Colombia

This coffee was grown by Sebastián Gómez at La Divisa, a farm located in Circasia in Colombia’s Quindío region. The area’s volcanic soils, mild temperatures (14–26°C), and consistent rainfall create ideal conditions for producing high-quality coffees with clarity and complexity.

Sebastián is part of a new generation of Colombian producers focused on meticulous farming and processing practices. This lot is 100% Pink Bourbon, a highly prized varietal known for its floral aromatics, bright acidity, and elegant sweetness.

Only the ripest cherries are hand-selected, then floated and sorted to remove defects. The cherries undergo 30 hours of underwater fermentation before being pulped and gently washed removing all outer pulp around the beans. The coffee is then dried in temperature-controlled conditions until it reaches the ideal moisture level. This careful washed process enhances clarity and highlights the coffee’s bright citrus, crisp fruit notes, and floral character.

The final result is a refined and refreshing coffee that is vibrant with bright citrus, fresh apple sweetness, and delicate florals. Filter brewing is showcasing all the brighter notes of this coffee, whilst espresso brews are leaning to the balance and elegance of this profile beautifully.
