Coffee farm 'Diamante' epitomises the passion and dedication of married couple Deigo and Derlin Campos, who carefully cultivate and process their coffees on their family farm. Located in the rural town of El Plata, Hulia Colombia, Diamante is a labor of love that involves both the guidance of Derlin's coffee expert parents, Elias and Bellani Sanchez, and the expertise of her husband, world champion barista Deigo. The Diamante plantation has gained a reputation for producing exceptional coffees, including this exquisite lot.
This is a washed process coffee where the ripe coffee cherries are harvested, de-pulped, and washed, removing all fruit pulp surrounding the coffee beans. The coffee is then placed on sun-beds to dry-out the coffee beans, until they reach the optimal moisture content of 11%. 'Washed Coffees' are known to have clean and balanced characteristics, this process often promotes higher acidy in coffee, and showcases the coffees varietal, origin and the environmental growing conditions from which it is formed. Removing all the pulp surrounding the coffee, before it dries, eliminates the chances of fermentation occurring which can alter the coffee's original organic structure.
This coffee varietal, clean processing, and coffee growing region all contribute to its superior taste which is fruity and floral, with a balanced sweetness that fills every cup with bright flavours and juicy body.
This is our standard recipe for pour over filter brews using a 2 cup brewer. For larger sized brewers, increase the ground and brewed coffee weights using the same brew ratio.
