Project One Light, Anaerobic Natural - China

This catimor variety coffee is grown at Yuan yi yuan Estate, which is located in Mangshi, Yunnan province, and brought to Pony Coffee by Singularity Coffee, and produced by Project One Light. 

Project One Light (POL) is a specialty coffee processing project made up of coffee professionals and coffee processing experts. Founded in 2021 by Olina Cai, a native of Yunnan, this young company has already made a massive impact on the coffee industry worldwide.  Producing interesting and top-rated coffee varietal’s, paid with skilled expertise in coffee producing methods, POL coffees are winning over coffee enthusiasts everywhere with their incredible lots, and vision for a more sustainable and brighter future for Yunnan Coffee. 

This lot has been processed using anaerobic fermentation, with the addition of natural yeasts. This process requires careful monitoring to control the levels of fermentation in an oxygen starved environment. This process allows delicate flavors to permeate the coffee beans, before they are laid to rest and sun-dried for several weeks. The result of this meticulously detailed process is evident in every cup, with unmissable floral fruit notes and sweetness ever present. 

This coffee delivers delicious flavor and is especially exceptional when brewed for a filter, showcasing notes of lychee and peach tea, but these notes will not be missed in your espresso brews also.
