Naturally processed, this lot was dried at Sawana, Ture Waji’s drying station in the hills of Shakiso, Guji. Established in 2022, Sawana was built to separate processing for coffees from Bookkisa and Shoondhisa, which were previously handled at a single site. The station now buys cherries from around 30 smallholder farmers, allowing for more focused processing and improved clarity in the cup.

Coffee production in Ethiopia is structured differently to much of Latin America. Instead of large estates, most growers work small garden plots, often alongside subsistence crops. Average farm size sits around 2.5 hectares, with lower planting density and much of the coffee grown in semi-forested systems. That means fewer trees per hectare and lower yields, with national average output around 0.8 kg of cherry per tree.

Coffee is traditionally sold at a price that has nothing to do with farmer's living expenses (Read: C Price) and is often below the cost of production. We don't like the idea of Wall Street influencing how much our producers get paid on a given day. Our sourcing partners always pay premium prices based on cost of production and quality; not the market price.
