From Cherry to Cup - Carbonic Maceration: Coffee's Wine-Inspired Experiment

Inspired by techniques used in the production of Beaujolais wines in France, some coffee producers began experimenting with a method known as carbonic maceration. The results were unlike anything most coffee drinkers had tasted before: explosive fruit character, vibrant aromatics and intensely expressive flavour profiles that seemed to challenge traditional ideas of what coffee could be.

Almost overnight, carbonic maceration became one of the most talked-about processing methods in specialty coffee. For some, it represented the cutting edge of innovation. For others, it raised difficult questions about the role of processing in shaping flavour.
Regardless of opinion, carbonic maceration helped redefine the possibilities of coffee fermentation.

WHAT IS CARBONIC MACERATION?

In standard anaerobic processing, coffee is sealed in an oxygen-free environment and fermentation begins naturally as microorganisms consume sugars and produce carbon dioxide.

In carbonic maceration, producers actively introduce carbon dioxide into the fermentation vessel before fermentation begins, creating an environment almost entirely saturated with CO₂, dramatically altering the biological and chemical processes occurring inside the cherry.

Just as importantly, carbonic maceration is typically performed with whole coffee cherries rather than depulped coffee, allowing fermentation to occur within the intact fruit itself.

The level of precision required is significantly higher than many traditional processing methods as small changes in temperature, pressure or fermentation duration can produce dramatically different results.

HOW IT CHANGES FLAVOUR

Carbonic maceration can amplify aromatic compounds, enhance fruit expression and create flavour profiles that are difficult to achieve through traditional methods alone.

Carbonic maceration coffees are often associated with:

  • Intense aromatics
  • Elevated sweetness
  • Bright tropical fruit notes
  • Candy-like characteristics
  • Silky mouthfeel
  • Enhanced complexity

Depending on the coffee and fermentation design, flavour notes may include strawberry, pineapple, passionfruit, watermelon and bubblegum.

At their best, these coffees are vibrant, elegant and remarkably complex.
At their worst, they can feel artificial, overwhelming or disconnected from origin character.

THE DEBATE

Few processing methods have generated as much excitement and criticism as carbonic maceration.

Supporters see it as a natural evolution of specialty coffee's pursuit of quality and innovation. They argue that producers should have access to the same fermentation tools that have transformed industries such as wine and beer.

Critics question whether some carbonic maceration coffees prioritise processing effects over terroir.
