This coffee grown in the Gedo zone, Yirgacheffe, in the district of Chelchele, benefits from very high altitudes, fertile soils, and a unique climate characterised by mountain ranges and dry conditions. These factors contribute to its exceptional quality, resulting in a cup that features bright delightful floral notes and a berry sweetness that is truly enjoyable.
The genetic diversity of the flora, combined with the numerous natural mutations of coffee trees found throughout Africa, contributes to the unique flavour profiles. Additionally, the absence of chemical pesticides and the natural growth of wild trees, alongside minimal human intervention, allow the natural characteristics of the coffee to shine through in every cup. This dedication to preserving the environment and traditional farming methods results in a coffee experience that is rich, complex, and truly reflective of its origins.
This coffee is processed at the Chelbesa wet mill. Here, the processing of ripe cherries involves an initial fermentation for 36 to 72 hours in concrete tanks. Defects are then removed, and the cherries are graded before being sun-dried on raised African beds. Throughout the peak sun hours, the coffee is carefully shaded and regularly rotated to ensure uniform drying. This entire process can take up to 12 days, contributing to the exceptional quality of the coffee produced.
This Chelchele coffee is an ideal all-rounder. It has bright, floral berry and grape flavours that shine, making it delicate enough for filter brewing. Yet, it’s also full of flavour and balanced for espresso.
