Rather than allowing processing to dominate the cup, every stage is designed to preserve the cultivar's natural elegance and reveal the character of the farm itself.\u003c\/p\u003e\n\u003cp\u003eOnly perfectly ripe cherries are selectively harvested before undergoing a short, carefully controlled fermentation. After pulping, the coffee enters a second, slower fermentation that gently removes the remaining mucilage while enhancing sweetness and complexity without compromising clarity.\u003c\/p\u003e\n\u003cp\u003eThe parchment is then thoroughly washed, graded by density and dried slowly under carefully controlled conditions.
