After careful sorting, the cherries are pulped and fermented for 40–42 hours in a 2% salt solution made using salt from nearby Lake Katwe. The parchment is then washed and sun-dried on raised beds for 18–24 days, with frequent raking and careful hand-sorting throughout the drying process.\u003c\/p\u003e\n\u003cp\u003eThis coffee is a washed coffee, but it uses a lactic fermentation, adding another layer of complexity while maintaining the clean character of a washed coffee.\u003c\/p\u003e\n\u003cp\u003eBunyangabu Washing Station is part of a partnership between Sucafina NV and UGACOF, working closely with local farmers to create greater opportunities through specialty coffee.
