At Ayla, coffee from each kebele is kept separate, providing greater traceability and allowing the character of each growing area to shine through.\u003c\/p\u003e\n\u003cp\u003eThe carefully selected cherries are hand-sorted before being spread on raised African drying beds. They are turned regularly and protected from intense midday sun and overnight moisture, with drying taking around 15–18 days.
